Here, Chef Junior shows how he utilizes abalone from the Abalone Farm, Kona raised Hawaiian kanpachi from Blue Ocean Mariculture, large tiger shrimp from Moana Labs, and clams and lobster from NELHA, too into the menu items he prepares at the Westin Hapuna restaurant, Meridia.
